This cucumber sushi is perfect for eating any time of the day! It’s also a great snack idea to make for get-togethers or for the kids lunch boxes. YUM!
Cucumber ‘Sushi’
Ingredients:
1 Large Cucumber
1 large tin of tuna in spring water
1 carrot (or veggie/s of your choice)
1 tablespoon mayonnaise
Sushi sides (wasabi, pickled ginger, soy sauce)
Method:
Cut cucumber in to pieces about 1 inch and cut out centres
Drain tuna and mix with mayonnaise – add some salt and pepper at this point
Slice carrot in to small strips or julienne
Now spoon tuna mixture into cucumber pieces and finish by adding carrot or veggie of your choice to ‘sushi’
Serve with your favourite sushi sides such as pickled ginger, soy sauce and wasabi
