2/3 cup flax meal
1 small zucchini grated
Pinch of salt and pepper
Preheat oven to 180 °c
Mix all ingredients together well
Fill mini muffin tray up to ¾ full
The Fun PART!
Add flavours of your choice by adding small pieces of your favourite things to each muffin prior to cooking.
I like to add a small slice of sundried tomato and a crumble of goat cheese or a small diced piece of cooked bacon and goat cheese. YUM!
Cook for 15 minutes or until cooked through.
