Cauliflower ‘Cous Cous’

This cauliflower ‘cous cous’ is the perfect side to just about anything and tastes great for lunch the

next day – if there is any left!

Cauliflower ‘Cous Cous’

Ingredients:

1 head cauliflower

Half teaspoon ground cumin

Half teaspoon paprika

Half teaspoon cinnamon

1 Pomegranate

Half red onion

Handful of fresh mint

2 tablespoons natural yoghurt

Handful of pumpkin seeds

Method:

Preheat oven to 180

In food processor, whizz cauliflower until it resembles chunky rice/cous cous

Transfer cauliflower to an oven tray and add cumin, paprika and cinnamon and bake in oven for 20

minutes or until browned, stirring occasionally

Let cool slightly and transfer to a bowl. Add pomegranate seeds, thinly sliced red onion, chopped

fresh mint and yoghurt.

Stir all ingredients together and top with pumpkin seeds and salt and pepper.
