Need a quick and easy delicious salad to whip up? Here is a Shake UP favourite – Nicoise Salad. Great for lunch or dinner – or even as a side! One the whole family will love.
1 x 425gm tin tuna in spring water
1 red capsicum
250g cherry tomatoes, halved
150g baby green beans, trimmed (not pictured in above salad)
200gms baby spinach or mixed leaves
1/3 cup small black olives
1 tablespoon red wine vinegar
3 teaspoons Dijon mustard
1/4 cup flax oil
Boil 4 eggs until they are just hard boiled. While they are boiling you can lightly steam the green beans above the pot.
Mix all salad ingredients together in a bowl including tuna and steamed beans.
Peel and quarter boiled eggs and add to salad.
Combine flax oil, red wine vinegar and Dijon mustard – mix or shake very well and pour over salad.
Add salt and pepper to taste
