Tuna Patties

Makes about 15 – great as a snack or with salad for lunch or dinner.

All you need is:

1 425gram tin of tuna in spring water

1 tin of chick peas

1 zucchini cut into 3

3 eggs

1 spring onion cut into pieces

1/2 cup flax meal

a teaspoon of vegetable stock for seasoning 🙂

Drain tuna very well and wash and drain chickpeas. Put all ingredients into a food processor and whizz a couple of times until well mixed. Do not over process – I like to leave a few chunky chickpeas.
Preheat oven to 180 Degrees. Cook patties on both sides in a pan with a little oil – I use macadamia oil. Transfer patties into oven tray and cook for around 5 minutes to complete cooking process and to keep warm while preparing a delicious salad to go with your patties 🙂
