Banana and Zucchini Bread
Ingredients
130 gms coconut oil
3 ripe bananas
1 zucchini
70gms coconut sugar
2 eggs
120 gms wholemeal self raising flour
100 gms flax meal
2 tsp baking powder
2 tsp apple cider vinegar
100 gms milk (soy/coconut/cows/almond – your choice)
2 tsp natural vanilla extract
Method
Preheat oven – 180 degrees
Whizz up bananas and zucchini in a food processor
Mix in coconut oil and coconut sugar
Whisk eggs and mix into mixture
Add remaining ingredients and mix altogether
Pour into greased baking dish and cook for 50 minutes. Ensure cooked through and then leave to cool before turning out and then enjoy 🙂
