Chicken, Asparagus and Green Bean Salad

Finding it hard to find ideas for delicious salads?  With summer coming up you’ll need all the salad recipes you can get!

Salads don’t have to be boring, there are loads of different delicious salads you can make that’ll satisfy and fill you up!  Here’s one of my favourites below:

Ingredients:

500 grams of chicken breast

1 teaspoon curry powder (I use Keens)

2 Tablespoons of soy sauce

200 Grams green beans

One bunch of asparagus spears

Spinach leaves or leaf mix

cucumber

radish or red onion

pumpkin seeds

sunflower seeds

Macadamia Oil

Himalayan Sea Salt

Method:

Slice chicken thinly and coat with curry powder and soy sauce.  Sit marinated chicken in fridge until you are ready to cook it.

In a wok or frying pan heat Macadamia Oil (or your oil of choice – choose one with a high burning point) thrown beans and asparagus spears into pan with a pinch of salt and cook until browned.

Chop salad while veggies are cooking and place in a salad bowl.

Once veggies are cooked and have cooled slightly, pour them on top of your salad and mix through.

In same pan, place sliced, marinated chicken and fry until cooked through.

Place chicken on top of salad and top all with a sprinkle of pumpkin and sunflower seeds for a bit of crunch, a pinch of sea salt and a dash of oil (Macadamia or Olive).
