This is a great meal for after training with the potatoes – if you haven’t trained just swap the potato chips for pumpkin or extra veggies. And this meal will take you minutes to prepare with a little time in the over. EASY PEASY!
Ingredients:
2 Pieces of Fresh Barramundi (or more for more than 2 people)
Your choice of Veg, you can really use whatever you have in the fridge – Here we used:
Bunch of Asparagus
Capsicum
Onion
Garlic
Potatoes
Lemon
Macadamia Oil (or your choice of oil with a high smoke point)
Generous Pinch of Salt
Pinch of Paprika
Fresh Rosemary or pinch of dried rosemary
Pinch of dried Thyme
Chilli flakes/powder
Method:
Pre-heat oven to 180 degrees
Chop all of your vegetables
Put potatoes and any root vegetables into an oven safe pan and coat with a sprinkle of macadamia oil (or oil with high smoke point), rosemary, salt and thyme.
Bake for 10 minutes in oven
Remove root vegetables from oven and add your barramundi to the pan as well as all other vegetables that you have chosen to use.
Put chopped garli, onion and capsicum on top of fish.
Coat fish with sprinkle of macadamia oil, salt, paprika and chilli flakes.
Coast other veggies with a drizzle of oil and salt.
Return tray to oven and bake for a further 30 minutes or until fish is cooked through. Time will vary depending on how big your fillets of fish are.
Serve on a bed of spinach leaves for extra fibre and pop a good squeeze of lemon on top of your fish.
